I searched all over the world looking for this – Ghana, Vietnam, Indonesia, Thailand, Sri Lanka to name a few – I was looking for a coal that had extremely low ash content, low volatiles too, along with a high calorific content (meaning it burns hotter).  The coal you use really does make a difference and this is nothing like the coal you buy in supermarkets or petrol station forecourts (who literally sell you the lowest grade possible).

This is the coal that I was looking for.

It is surprisingly heavy, there is some, but not much carbon dust on the surface – and we treat it carefully when we transport it to minimise creating more dust… it comes in big blocks that burn for hours, it has ZERO added chemicals – and it exceptionally good.  If you buy a bag – take out a piece and look how it shines and glints in the sun – and you will know it is exceptionally good too.

But why does coal matter? It is, after all, getting burned and going up in smoke – well it does matter. Whatever you burn ultimately imparts a flavour on your food and you want something that, as a base is subtle… so it doesn’t overpower the flavours you want. You can add wood chips like hickory, oak, cherry wood or anything and pair your smoke with the food – just like you would with any flavours.

DO NOT USE ANY CHEMICALS TO LIGHT THIS OR ANY COAL IN YOUR KAMADO – seriously, I mean it… otherwise you will be tasting lighter fluid for days.  Only use natural ways to light the coal – paper or kindling is best… gas guns work, but they might also impart a slight chemical flavour too if you’re not careful (so don’t do what I’m doing in one of the pictures – the photographer wanted this shot, and it looks kinda cool, so the picture is staying – and the food didn’t actually taste of any chemicals).

The Coal Chimney is a brilliant way to get the coal started and can minimise gas/chemical tastes – let it burn a while in the chimney to make sure these nasty flavours burn away, because your kamado will soak it up in it’s inner porous surface, and pass it on to everything you cook in it.
